Master Chef Stefan Pappert knows that large-scale catering is about far more than trays, timing and temperature. For him, delivering excellence at scale begins with trust – in his team, his process and the equipment he relies on.
During a recent visit to ScanBox headquarters in Sweden, Stefan shared his insights and experiences from large-scale catering with our team. He met many of our colleagues, discussed the importance of reliability in professional kitchens – and even joined us in the kitchen to prepare food for our summer party.
"You can’t improvise when you’re serving 18,000 beef fillets at Wembley Stadium,” he says. “Everything must work - every time. Once you have that reliability, then you can start being creative.”
With vast experience from large scale event catering and over two decades as a chef, Stefan has seen the industry change. Catering teams have become smaller, schedules tighter, and expectations higher. Cooking for thousands of guests at international events, his challenge is to deliver the same quality in every VIP lounge, restaurant, or players’ dining area – often far from the main kitchen.

At the Champions League Final 2024 at Wembley National Stadium, Stefan’s team served 18,000 beef fillets using more than fifty ScanBox units. At Oktoberfest in Munich, he now caters to 15,000 guests a day with a fraction of the manpower once required.
